I'm Not Really a Casserole Kinda Gal...

...but this, and shepherd's pie are where I make exceptions. I wish I could remember where I first saw this recipe, so I could give them credit. I don't think this version varies that much from the original. It doesn't look like much, but it really is tasty and easy.


1 cup of brown rice, cooked in vegetable broth (does a ton to add flavor)
1 can of beans (I usually use kidney beans)
Turkey chourice (I had about a link and half left over from breakfast the other day)
1/2 cup shredded cheese
1/4 cup walnuts

Sprinkle the top with about another 1/2 cup of shredded cheese
Put it in a baking dish and throw it in the oven (I think I do 350 for about 20-25 minutes).

I made this tons of times in my veggie days, too. Just skip the chourice and it's just as yummy. :)
