My Favorite Salad

Romaine
Cucumber
Tomato
Mango
Avocado
Garbanzo Beans
Feta
Walnuts
Julie's tip for garbanzo beans - rinse them, then heat them up a little bit first. Makes them softer.
It's so good... lots of different textures and flavors. The sweetness of the mango, the crunch of the cucumber and the saltiness of the feta... and it's definitely a meal type salad. Don't think you'll have room for a sandwich or something, too.
Other suggestions/variations:
Fruit - strawberries, blueberries, nectarines, melon
Veggies - zucchini, summer squash, artichokes
Protein - grilled chicken, shrimp or tofu, edamame, sliced almonds
