Tandoori Chicken and Coconut Rice
Yum!
Not as good as Rasoi, but really good. Great ingredients, super easy and delicious. You do have to let it marinate, so be sure you have at least an hour to do that. Maybe mix it up and throw it in the fridge before leaving for work. I did one hour and it was great. For my gluten-free peeps: yup, it's safe!
It went really well with this recipe for coconut rice. It was good... you definitely could taste the coconut. I did put some butter and salt on it though... and some leftover pomegranate seeds!
Sorry about the bad photo quality... we were too hungry to get out the good camera and fiddle with lenses!!

wow Melissa, you're making me hungry for Indian food, which I soooo love! Yet, nobody in my house likes it at all, so I rarely go out for it, or cook it. However, now that i'm reminded of how much I like it, I think I WILL cook some tandoori chicken, even if it's just for me. Have a lovely newly wed Christmas

Hi Trish! Tandoori chicken is fantastic, isn't it? I was just introduced to Indian food last year and really can't get enough of it. I know there is so much more to try, but I'm in love with chicken tikka masala, vegetable mango curry, and this cauliflower that Rasoi makes... so good! If you haven't been to Rasoi, I would highly recommend it :)
