Pomegranates


Pomegranates are one of those "super fruits" you read about... high in antioxidants, may help to prevent heart disease, some types of cancer and Alzheimer's... but they're also yummy!

They can be intimidating at first glance...they're kind of funny looking and beautiful at the same time. Tonight, this little number made an appearance in a variation of My Favorite Salad! We used a greens mix, cucumber, grape tomatoes, avocado, black beans, feta, pistachios, dried cranberries and of course, pomegranate seeds.

Here's what the seeds look like, once you pop them out:

Brett Moore has a great article on how to cut open a pomegranate here. Personally, I love the seeds in salad and the juice is delicious (ever had a pomegranate martini?). But there are lots of ways people are using the fruit... chicken recipes, dessert recipes, salad dressing... the list goes on. I know I'll be trying Brett Moore's Pomegranate Banana Cheesecake and Heidi Swanson's Bulgur, Celery and Pomegranate Salad.

The season is here... runs till about January... if you've never tried a fresh pomegranate, why not give it a whirl?
