Roasted Golden Beets with Goat Cheese and Pistachios




I'm convinced that most vegetables are best when roasted. Some of my most recent favorites: asparagus, Brussells sprouts, acorn squash... and now, golden beets.

The mister made a fantastic dinner last night, with pork tenderloin and kale chips... but the star was definitely the beets.

How's this for uncomplicated?

  • Slice the beets
  • Toss the beets in olive oil
  • Place beets on a cookie sheet
  • Sprinkle beets with salt and pepper
  • 350 for about 20-25 minutes
  • Plate 'em up
  • Sprinkle with goat cheese and chopped pistachios
We thought afterwards that a nice addition would have been balsamic vinegar. We'll definitely try that next time.

I know you're wondering what kale chips are.

Kath talks about them all the time on her blog, and I actually did try them once, but failed miserably. I left it up to the mister this time, and of course his came out way better.

The key may be making sure that each leaf has enough olive oil (not too much though). But yeah, super easy and they DO come out crunchy!

Here's how:
  • cut the leaves off of the stem
  • drizzle olive oil
  • sprinkle with salt (or whatever seasonings you like)
  • 350 for about 10 minutes
